  7. Using a 1-inch round cookie cutter, cut out circles from the center of each larger circle.
  8. Bake the circles for 8 to 10 minutes, or until they are lightly golden brown.
  9. Let the circles cool completely.
  10. In a small bowl, mix together the raspberry jam, confectioners’ sugar, and almond extract.
  11. Spoon the mixture into the center of each cooled circle.
  12. Serve the Sweet Vol Au Vents immediately.
