Classic French Fruit Tart

Who doesn't love a French Fruit Tart? This classic recipe has been a favorite among French households for generations, and now it can be one of yours! This delightful tart is made with a flaky crust, creamy custard filling, and topped with a selection of fresh fruits. It's a decadent yet simple dessert that will be sure to impress your friends and family.

Ingredients

  • 1/2 cup (115 grams) butter, softened
  • 1/4 cup (50 grams) granulated sugar
  • 1 cup (125 grams) all-purpose flour
  • 1/4 teaspoon (1 gram) salt
  • 1 large egg, lightly beaten
  • 1/2 teaspoon (2 grams) pure vanilla extract
  • 2/3 cup (150 grams) whole milk
  • 3 tablespoons (45 grams) cornstarch
  • 2/3 cup (130 grams) granulated sugar
  • 2 large eggs
  • 1/2 cup (115 grams) butter, melted and cooled
  • 1 teaspoon (5 grams) pure vanilla extract
  • Assorted fresh fruits, such as sliced strawberries, blueberries, raspberries, and/or peaches

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, cream together butter and sugar until light and fluffy. Add flour and salt and mix until combined. Add egg and vanilla extract and mix until combined. Press the dough onto the bottom and up the sides of a 9-inch (23 cm) tart pan with a removable bottom. Prick the bottom of the crust with a fork. Bake for 12-15 minutes, until lightly golden brown. Set aside to cool completely.
  3. In a medium saucepan, whisk together milk, cornstarch, and sugar. Place over medium heat and stir constantly until thickened, about 5 minutes. Remove from heat and whisk in eggs, butter, and vanilla extract until smooth. Pour the mixture into the cooled tart shell.
  4. Bake for 25-30 minutes, until the custard is set. Allow to cool to room temperature, then chill in the refrigerator for at least 2 hours before serving. Decorate the top of the tart with fresh fruits.
