- 1/2 cup of cooked basmati rice
- 1/2 cup of cooked chickpeas
- 2 tablespoons of olive oil
- 1/4 teaspoon of ground turmeric
- 1/4 teaspoon of ground cumin
- 1/4 teaspoon of ground cardamom
- 1/4 teaspoon of ground cinnamon
- 1/4 teaspoon of ground black pepper
- 1/4 cup of dried cranberries
- 1/4 cup of slivered almonds
- 1/4 cup of chopped fresh parsley
Instructions:
Step 1:
In a large bowl, mix together the cooked basmati rice and chickpeas.Step 2:
Heat the olive oil in a large skillet over medium heat. Add the spices and cook for 1 minute, stirring constantly.Step 3:
Add the rice and chickpeas to the skillet and cook for 3-4 minutes, stirring occasionally.Step 4:
Stir in the dried cranberries, slivered almonds, and parsley. Cook for an additional 1-2 minutes.Step 5:
