  5. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
  6. Add the crawfish tails and simmer for 10 minutes, stirring occasionally.
  7. Remove the saucepan from the heat and stir in the green onion and parsley.
  8. Serve the étouffée over cooked rice.
