Pulled Pork With Tangy Barbecue Sauce

Ingredients

  • 2 pounds boneless pork shoulder, cut into 1-inch cubes

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine the pork cubes, olive oil, garlic powder, smoked paprika, salt, and pepper. Mix until the pork is evenly coated with the seasonings.
  3. Arrange the pork cubes on a baking sheet and bake for 20 minutes, or until the pork is cooked through.
  4. While the pork is baking, make the barbecue sauce by combining the apple cider vinegar, ketchup, brown sugar, Worcestershire sauce, Dijon mustard, chili powder, and cayenne pepper in a medium saucepan. Bring to a simmer over medium-low heat and cook for 10 minutes, stirring occasionally.
  5. Remove the pork from the oven and transfer to a slow cooker. Pour the barbecue sauce over the pork and stir to combine.
  6. Cover the slow cooker and cook on low heat for 4-6 hours, stirring occasionally.
  7. Once the pork is fully cooked, use two forks to pull the pork apart into shreds.
  8. Serve the pulled pork with extra barbecue sauce.
