Let's get started! ## Recipe for Gluten Free Cabbage Soup ### Ingredients - 1 tablespoon olive oil - 1 onion, diced - 2 cloves garlic, minced - 1/2 teaspoon dried thyme - 1/4 teaspoon paprika - 1/4 teaspoon red pepper flakes - 6 cups vegetable broth - 2 cups shredded cabbage - 1 can white beans, drained and rinsed - 1/2 cup uncooked quinoa - 2 tablespoons fresh parsley, chopped ### Instructions 1. Heat the olive oil in a large stockpot over medium heat. 2. Add the onion and garlic, and cook for about 5 minutes, stirring occasionally, until the onions are softened. 3. Add the thyme, paprika, and red pepper flakes, and cook for 1 minute more. 4. Add the broth, cabbage, beans, and quinoa. Bring to a boil, reduce the heat, and simmer for 30 minutes, stirring occasionally. 5. Add the parsley and serve. Enjoy!
