Ingredients
- 1 pound beef feet, cleaned and cut into 2-inch pieces
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 cups canned diced tomatoes
- 1 tablespoon tomato paste
- 2 cups beef broth
- 1 cup water
- 1 bay leaf
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
- 2 tablespoons chopped fresh cilantro, for serving
- 2 tablespoons chopped fresh parsley, for serving
Instructions
Place the beef feet in a large saucepan and cover with cold water. Bring to a boil over medium-high heat, reduce the heat to low, and simmer for 45 minutes. Drain the beef feet and set aside.
Heat the oil in a large Dutch oven or soup pot over medium heat. Add the onion and garlic and sauté until the onion is softened, about 5 minutes. Add the tomatoes, tomato paste, beef broth, water, bay leaf, oregano, cumin, coriander, and smoked paprika. Bring to a boil, reduce the heat to low, and simmer for 10 minutes.
Add the reserved beef feet to the pot and simmer for 1 hour, stirring occasionally. Remove from the heat and season to taste with salt and pepper. Serve in bowls garnished with cilantro and parsley. Enjoy!
